DON's Dishes: Gazpacho
In law school on Fridays, my besties and I would often treat ourselves to what we called "Alcoholic Salads" from Duke's in Malibu, which were actually Bloody Mary's with lots of veggies hanging out the top. This version of gazpacho reminds me a lot of a virgin soup version of that drink. It is cool, refreshing, packed with vegetables, filling, low-calorie, and takes about 5 minutes to make. Sold yet? I generally eat a big bowl of this in the late afternoon to stave off hunger/reduce my need for a big meal after work. It keeps for several days in the fridge, just give it a good shake if it separates! Final note, consistency is up to you. The gazpacho of my childhood is way chunkier and I love that - this is more like a smoothie texture...a Bloody Mary smoothie!

Tabouli
2 tomatoes, diced
1/2 cup frozen peas
1 cucumber, diced
1.5-2 bunches of parsley, chopped, big stems removed
1 cup bulgar, cooked
4-5 scallions, diced
2-3 Tbsp extra virgin olive oil
3 Tbsp fresh lemon juice
1 tsp allspice
1/2 tsp cinnamon
1/4 tsp nutmeg
1. Combine all ingredients. Best if you let sit for a day, stirring or flipping occasionally to marinate all the veggies. I tend to go heavier on the lemon juice and lighter on the olive oil, but the more you marinate, the yummier it gets!
