One of the best things you can do for your body is eat the rainbow. No, not Skittles, I mean get fruits and veggies in every color spectrum united on your plate. When I came across Caroline Armelle's lovely Mediterranean Couscous Salad on Pinterest, I knew I would enjoy the flavors and it would be an excellent candidate for "rainbowcizing". Don't get me wrong, it is delicious on it's own, but I wanted to get more greens in and fill up on more fiber, less carbs. I went with spinach and kale since I nearly always have both handy.
Kale is one of my favorite greens and is so incredibly healthy, filled with vitamin A,K,C, fiber and an anti-carcinogenic. It's in season for January/February so fall in love with it now! A little tip, if kale is too tough for you, massage it with a little salt and that will help it start to break down, making it easier to chew and digest.
Don't be intimidated by the amount of ingredients. Play around with what you have on hand, it's just about getting lots of colors, textures, and great nutrients in one dish. This kept well overnight and I think would be an awesome dish to bring along to a shower or book club.
