In law school on Fridays, my besties and I would often treat ourselves to what we called "Alcoholic Salads" from Duke's in Malibu, which were actually Bloody Mary's with lots of veggies hanging out the top. This version of gazpacho reminds me a lot of a virgin soup version of that drink. It is cool, refreshing, packed with vegetables, filling, low-calorie, and takes about 5 minutes to make. Sold yet? I generally eat a big bowl of this in the late afternoon to stave off hunger/reduce my need for a big meal after work. It keeps for several days in the fridge, just give it a good shake if it separates! Final note, consistency is up to you. The gazpacho of my childhood is way chunkier and I love that - this is more like a smoothie texture...a Bloody Mary smoothie!

Gazpacho
2 large tomatoes
1 English cucumber (with peel)
1 bell pepper (any color but red will keep your soup the right color)
3 Tbsp red wine vinegar
Splash of garlic hot sauce (I love Pepper Plant, but Cholula or any other will do)
Splash of Worcestershire sauce
Salt and pepper to taste
1. Wash and trim veggies. If you are using a Cuisinart or lower-power blender, rough chop. If you are using a VitaMix, just throw in whole, tomatoes at the bottom.
2. Blend everything and season to taste! Sometimes I want to add another pepper or another tomato, just go with what is tasty for you!

Also, an awesome side for summer time grilled meals! Or, if you like seafood, grill up some shrimp or lobster and throw it on top for a full meal!

This sounds SO good - and now I want a bloody mary! I think I might make this with a side of celery or pickled okra!
