DON's Dishes: Crunchy Brussels Sprout Salad

I recently had a friend of a friend write me asking for easy dishes to prep the night before a party, especially salads that wouldn't wilt and wither. My go-to in that situation has always been my Chinese Chicken(less) Salad since cabbage holds up so well, but last week I created another excellent alternative.


I am all about having some crunch in my salad. Sturdy raw greens like brussels sprouts, kale, and broccoli slaw definitely fit the bill.  If you have a Trader Joe's near you, you can find a bag of pre-chopped kale and broccoli slaw on the cheap which makes this so freaking quick to prepare. If not, you can ditch the slaw.

Something else I love about this salad is I can toss it with dressing and it stays fresh and crunchy for a couple days. Nothing more diet and health-friendly like coming home to a ready salad to snack and fill up on while prepping a light dinner!

Ingredients:
2 cups kale, washed, de-stemmed, chopped
8 brussels sprouts
3/4 C broccoli slaw (broccoli stems and carrots shredded)
1/4 C almonds or hazelnuts
1/8 C dried cranberries

Dressing:
2-3 T olive oil
1 lemon, juiced
1 T agave or honey
1.5 t mustard
Pinch of red pepper flakes
Pinch of salt and pepper

Directions:
1. Toast almonds in a dry skillet for a few minutes. Remove from heat and chop.
2. Prep veggies. Chop bottoms off brussels sprouts and shred with a mandolin or chop finely. See pic for the idea.
3. Mix all greens with cranberries and almonds in a bowl.
4. Whisk dressing ingredients together. Adjust ingredients to taste; should be sweet and tangy. I go really light on my oil, you may want more.
5. Enjoy! If you are not fancy like me, you can pack in a mason jar and take it on the go!
