DON's Dishes: Hawaiian Salad

I'm so glad a bunch of you have tried some of my recipes; I love hearing from those of you who do!  Cooking and baking are a huge passion of mine. Here's one I tweeted about awhile back, but forgot to share.

One of the best salads in my life was at Merriman's on the Big Island.  That rolling drive away from the shore and over to the restaurant was completely worth the amazing tropical salad I had. Mine had grilled shrimp on it and I think this recipe would also welcome that addition. Is it summer yet?

Hawaiian Salad
Makes one large serving, adapted from tumblr via Healthy.Happy.Life (I cut down on the fats)

4 cups of lettuce or other greens
1 mango, cubed
1 avocado, cubed
1/2 cup macadamia nuts, roughly chopped
1/4 cup sweet white onion
Optional: grilled shrimp or diced apples

Dressing:
1/3 cup lemon juice
2 T apple cider vinegar (can substitute champagne, red or white wine vinegar)
1.5 T dijon mustard
1 T olive oil
1 t honey
Garlic powder, salt and pepper to taste (shake or two)

Directions:

  1. Prepare the salad dressing by whisking all ingredients together. Put it in the refrigerator to chill slightly.
  2. Put together your salad, top with dressing, toss and serve!
Delicious with a nice crisp glass of white wine. Mmm...
