DON's Dishes: Weeknight Dishes

I seriously love cooking, so much so that I cherish Sunday evenings cooking, washing veggies, and doing prep work for my meals.  Part of my Spring Cleaning is working my way through my pantry and freezer, finding meals that require little more than fresh produce to put together. Here's what I will be having for dinner this week:

Winter Lentil Soup from Real Simple (I just made this for the first time & it is really thick, even though I only used one sweet potato. You might want extra liquid/tomatoes for yours.)
Halibut in Artichoke and Tomato Broth from Giada De Laurentiis
Thai Lettuce Cups with Morningstar Grillers Crumbles (fake ground beef)
Gazpacho (my mom's recipe) and a Veggie Burger
Vegetable Stir Fry with Tofu and Grilled Shrimp

Do you plan your meals for the week? Any go-to meals?  One thing I found in my freezer I will NOT be trying to finish this month is a bottle of Jager. How old am I?
